A Taste for Health with Chef Antonio: Turkey Quinoa Sliders


Forget what you know about healthy cooking. Food can be both delicious and healthy at the same time. As Regional Executive Chef at the Detroit Medical Center, I’ve learned a lot about cooking for good health and great taste. Healthy cuisine is more than my profession; it's part of my life. I'm a chef, I'm diabetic and I love to eat. You can see why I'm always looking for ways to make healthy cooking taste great!

If you’ve had bariatric surgery or are considering it, you probably already know healthy cooking is an important part of achieving your weight loss goals and maintaining your weight. Fortunately, healthy cooking is not that difficult. A few simple changes to your cooking techniques and ingredient choices can help you lose weight and enjoy your meals.

Servings: 4
Total Cook Time: 15 minutes
Ingredients:
8 soft whole wheat dinner rolls (3-inch), split
2 oz. fresh baby spinach leaves washed
1 oz. fresh red pepper diced
1 oz. crumbled feta cheese
1/3 cup shredded carrots
3 Tbsp. roasted garlic paste
½ lb. lean ground turkey meat
2 oz. quinoa flakes (toasted)
1 egg
1 Tbsp. chopped parsley

Directions:
Preheat broiler. Place dinner rolls, cut side up, on baking sheet. Place under broiler and lightly toast, turning baking sheet to toast rolls evenly.

In medium bowl, combine spinach, red pepper, feta cheese, carrots, and garlic paste. Divide mixture over bottom halves of rolls. Set aside.

In a large mixing bowl combine turkey, quinoa, parsley, and eggs, Mix by hand until ingredients are thoroughly combined. Roll mixture into 2 oz. patties.

Coat large non-stick skillet with non-stick cooking spray and heat on medium high. Cook patties until internal temp reaches 165 degrees.

Layer turkey over spinach mixture, sprinkle with feta, and replace tops of rolls, toasted side down.\
